Mexico in the heart ….and on the palate


Being new in another country always brings with it a variety of places and things to miss. As Mexicans, regardless of how long we've been away, whether it's half a year or a decade, it's most likely that food is at the top of the things we long for. Because that's how we are, we need everything from the candies with chili that no one else understands, to the taco from the corner of our favorite stand in our city. And if there's one thing we are proud of as Mexicans, it's our food. 
 
Mexico is such an extensive country that the variety of dishes by region is very wide, with completely different colors, flavors, and aromas. For this reason, when we are abroad, it is complicated to find a place that gives us that seasoning we miss so much, that which makes us feel welcomed and transports us with a bite to our moms' kitchens. However, this becomes complicated as it ends up being a rally trying to find the restaurant that most resembles our authentic food.  
One thing that characterizes Mexicans is that we are sharing, and that's something we are taught from a young age at home. If as a child you bring your little friend or as a teenager you bring your partner, it's almost certain that they will leave without being able to eat anything else until the next day because of everything they were offered to eat almost "by force", with the classic - !Eat another, you're too skinny!-. That's why when we finally find a place that meets our expectations for Mexican food in another country, we don't hesitate to take our friends to try our pride, our spice, our flavor.  
 
Someone once said, "...everyone has nostalgia for Mexican food, it's just that some don't know it yet" and there's some truth to it because Mexican food has that effect of captivating even those who know nothing about it before trying it. Our food is meant to be loved, because it's not only tasty, it's also interesting, with vibrant colors, flavor combinations that strangely work together, and ingredients that can surprise. And the beautiful thing is that Mexican food is not just for those born in Mexico, it's for everyone who enjoys it and makes it a part of their life and their palates. 
Cometa's food aims to be that relief we need when we want that Mexican warmth and through our flavors convey that my house is your house to everyone who tries it, regardless of their nationality.
